On the menu you will find American cookery from every region. Many of the recipes are family heirlooms handed down for generations. Some had to be cajoled from clenched hands. Some families have actually been temporarily divided over what some would call improperly divulged dishes. Bubby’s is like a repository, and we try to place our loyalties where they will do most good.

That is, on the plate. So, this is what you are getting at Bubby’s: the recipes are traditional family recipes that have been shared (or stolen) to put this menu together; and each ingredient comes from a source that is made in the purest way, both actually and spiritually.

The First Bubby’s opened in Tribeca in 1990. There wasn’t even a traffic light down there. There were two tables, a coffee brewer, and a pizza over to bake pies in. From the day Bubby’s opened, the Tribeca neighborhood embraced her as family, and Bubby’s doors have been open to neighbors, friends, and anyone else who wanders by ever since.
